苔菜馅饺子,最春天的味道

/></p><p> </p><p>万物皆可包饺子。我不喜欢大鱼大肉,以各种蔬菜为主料的饺子,包括韭菜大白菜西红柿芸豆茭白竹笋,甚至苦瓜苦菜,和适量的猪肉搭配后,都可以成为我盘中饺子的馅料。</p><p> </p><p>今早跑步后,来到早市。第一眼看好的,就是翠嫩欲滴的苔菜。</p><p class="empty_paragraph"> </p><p class="qf_image big /></p><p> </p><p>苔菜和红根菠菜大葱一样,都是有着最顽强生命力的蔬菜。秋后,在任意的泥土里,撒上苔菜的种子。无需施肥,更无需浇灌。即便是寒冬时节,大雪盖地,都不必纠结苔菜的长势。</p><p> </p><p>在泥土里,吸收了整整一个冬天的天精地华后,阳春时节,就像穷人家的孩子,给点阳光就能灿烂的苔菜,以迅雷不及掩耳盗铃之势,就傲然地,长成了。</p><p> </p><p>没有农药的关怀,更没有化肥的宠幸。苔菜和红根菠菜,在中国的北方,大概是唯二的,可以与山中的野菜匹比,具备无公害名头的蔬菜了吧。</p><p class="empty_paragraph"> </p><p class="qf_image big noneditable" contenteditable="false"><img /></p><p> </p><p>在老农的摊位上,买了三斤苔菜。两块钱一斤的价位,几乎是当下最便宜的蔬菜价格。带回家,剪掉根茎,清洗干净后,放进开水锅里,焯掉苔菜的草酸和泥土味。</p><p> </p><p>在北方,苔菜更多的用处,还是包包子。我不是很喜欢包子,用苔菜来包饺子,亦是我致敬春天,最虔诚的礼赞吧。</p><p class="empty_paragraph"> </p><p /></p><p> </p><p>焯水后的苔菜,手工挤干水分后,放在菜板上剁碎。一棵章丘大葱,去掉葱叶部分,剁成碎末,倒入切好的苔菜上面。</p><p> </p><p>加些许泡好的海米,适量的盐,白糖,鸡精,香油,倒入比平时多三分之一的食用油,搅拌均匀。</p><p> </p><p>一盆苔菜馅饺子的馅料,如此简单而又纯粹。</p><p class="empty_paragraph"> </p><p 去年,做过太多次茴香饺子包子。伤心的回忆结束了,以后不会再做了。
